The difference in steel quality is generally calculated by vickers, which is a hardness rating. 316L runs at about 150+ vickers, can be as high as 700 vickers depending on how it is hardened - this extreme end of the hardness rating is generally for tool steels (very nice wrenches, etc). 904L (some wads call it "Rolex" steel) steel is somewhat higher in vickers, but not really by enough to write home about. Sinn's 'tegimented' steel runs at about 1500 vickers. DLC coatings (3-4 microns) gets to about 3500 vickers I believe - very scratch resistant.
